Chicken Satay

INGREDIENTS FOR MARINADING CHICKEN:

100 g  Chicken or pork slices

1 Tsp  Curry powder

½  tsp  Turmeric

1  Tsp  Soy sauce

½  Tbsp  Palm sugar

¼  Cup  Coconut cream

1  Tbsp  Vegetable oil (for grilled)

PREPARATION:

Marinade chicken in mixture of all ingredients

SATAY SAUCE INGREDIENTS:

½ T  Red curry paste

1/2 T  Massaman curry paste

1 T  Tamarind paste

1 T  Sugar or palm sugar

2 T  Roasted peanuts (ground)

¼ C  Coconut cream

½ C  Coconut milk

PREPARATION:

  1. Stir the massaman curry paste and red curry paste in the oil until fragrant, using low heat.
  2. Add coconut cream to mix and continue to heat until the fat separates (oil on top).
  3. Add ground peanuts
  4. Add coconut milk and seasoning.
  5. Reduce the sauce to a nice thick texture.
